Demerara rum is a type of rum made in Guyana. Today, there is only one active distillery left in Guyana, owned by a company called Demerara Distillers. Demerara Distillers makes dozens of different rums, in a range of age statements.
Demerara rum is most similar in style to Jamaican rum, but has a smoky, almost burnt flavor that can add complexity to cocktails.
El Dorado 21 YO Rum is made from rums of between 21 and 25 years of age, matured in 45 gallon oak casks, within six degrees of the equator in Guyana.
Most remarkably, this was the highest scoring rum ever to be tasted by the Beverage Tasting Institute in Chicago.
